Quinoa Salad - aka Something New to Do with Tuna!

This is a great mid-day meal. Lots of protein and good carbs, and some healthy fat to get you past the afternoon sweet and fat cravings. And it's a great way to use leftovers.

Ingredients

  • 1/2 cup Quinoa
  • 3 or 4 pitted Kalamata Olives - sliced
  • 1/2 can of Tuna (water packed)
  • 5or 6 cherry tomatoes sliced lengthwise
  • 1 cup raw spinach
  • 2 Tbsp Lemon Juice
  • 1/2 tbsp olive oil
  • Salt and pepper to taste

Instructions

This is a great use of your leftover Quinoa (serving size is one, but feel free to double or quadruple it!).

Add the Quinoa, Olives, Tuna, Tomatoes, and Spinach into a medium size mixing bowl. You can hand shred the spinach as you add it, or keep the leaves whole.

In a separate bowl, add the Lemon Juice, Olive Oil and Salt and Pepper. Whisk until blended using a whisk or metal fork.

Pour the dressing over the Quinoa mixture and enjoy!

This salad is better after sitting for a few hours, so it's great for lunch! And feel free to substitute any other veggies you think would work.

    Sounds yummy, I make something similar with balsamic vinegar. Love tuna and balsamic vinegar.
