Quinoa Salad - aka Something New to Do with Tuna!

This is a great mid-day meal. Lots of protein and good carbs, and some healthy fat to get you past the afternoon sweet and fat cravings. And it's a great way to use leftovers.
Ingredients
- 1/2 cup Quinoa
- 3 or 4 pitted Kalamata Olives - sliced
- 1/2 can of Tuna (water packed)
- 5or 6 cherry tomatoes sliced lengthwise
- 1 cup raw spinach
- 2 Tbsp Lemon Juice
- 1/2 tbsp olive oil
- Salt and pepper to taste
Instructions
This is a great use of your leftover Quinoa (serving size is one, but feel free to double or quadruple it!).
