Day 2- Time to get on track

Here we go with day 2. I'm on a mission. So proud of myself for not eating the fruit tart that someone brought in for our weekly meeting. It looked so good. Hard to resist but I did it.

  • Meal 1 - Morning Start

    Complex Carb - Starch: Oatmeal
    Complex Carb - Fruit or Vegetable: Strawberries, Blueberries
    Supplement: Flaxseed (ground), vitamins
    Drinks: water, coffee
  • Meal 2 - Midmorning Booster

    Lean Protein: hard boiled egg
    Complex Carb - Fruit or Vegetable: 1/2 apple
  • Meal 3 - Lunchtime Refuel

    Lean Protein: Tofu
    Complex Carb - Fruit or Vegetable: Spinach Salad with vegis
    Supplement: Vitamins
    Drinks: water
    Other Items: Dates (5)
  • Meal 4 - Mid-afternoon Munch

    Lean Protein: hummus
    Complex Carb - Fruit or Vegetable: carrotts
    Drinks: water
  • Meal 5 - Dinner Delight

    Lean Protein: Trader Joes 0% Fat Greek Yogurt (plain)
    Complex Carb - Fruit or Vegetable: blueberries
    Healthy Fat: pecans
    Drinks: water

    Notes: Another quick meal before TKD.

  • Meal 6 - Before Bed If Hungry - Optional

    Complex Carb - Fruit or Vegetable: small banana

    This recipe has been printed in Oxygen magazine a few times and I absolutely love it. I switch up the fruit I add, depending on the season. A couple of days ago I made it with fresh peaches and blueberries. I love that it has cinnamon - great for regulating insulin. It makes a ton so even though the recipe says 2 servings I split it into 3. Perfect for those busy weeks when you just need to wake up and have breakfast waiting for you.

    Tonight for supper i made haddock and asparagus.
